I've got an 82 750 as well and can help you out a little. As far as the exhaust goes, keep the 4-4 until it falls off. What you can do is called the "Tim Hodge Mod." You drill out the rivets holding the baffles in, remove the baffles and then drill a few holes in the baffles and replace.
Crash bars? Yep, they're hard to find. I found some on ebay right after I bought my bike that fit. I've had a hell of a time getting a set of highway pegs to mount, but I did it. These are for a CB900, but should fit.
