Riding down the east coast may sound like a good idea, but there's nothing 
like the Pacific Coast Highway in California. A couple of years ago, I 
drove from the outer banks of NC down to Savannah, GA. In general, you're 
riding flatlands away from the coast, so you could ride from Minnesota to 
Oklahoma and get much the same experience, except for the cities. Even Cape 
Hatteras was kind of a letdown, as the sand dunes are piled high on both 
sides of the road, and that's all you see for the most part. That said, the 
cities of Charleston and Savannah are to die for, but the ride in between 
is not.
  
As Tommy said, the roads inland are much more interesting. You can ride the 
Blue Ridge Parkway from Virginia to Georgia and get days of awesome vistas. 
I was just riding the southern end of it on my NH this past Monday. The 
Dragon that Tommy mentioned is Rt. 129, basically from Robbinsville, NC to 
Vonore, TN, in case you didn't know. Fun stretch of road, done it 3 times 
myself, but Rt. 180 (Wolf Pen Gap Road) between Suches and the same Rt. 129 
in Georgia is just as fun and has none of the traffic that the name "Tail 
of the Dragon" draws.

Anyway, consider a trip down the Appalachians, at least part of the way.
