As more or less already said, the front signals should have three wires: (1) ground, (2) running lights positive (3) turn signal positive. A wiring diagram for the bike should show the corresponding colors on the harness (and ground is almost surely green). You can figure it out which is which on the signals by measure pairwise resistance with a multimeter, poking pairs of wires against the battery terminals, or trial and error at the connections.
Seems like you want to replace the PO's spliced turn signal connections with a removable connector. OEM bullet terminals are somewhat uncommon in these parts, but there are plenty of places to order online (Eastern Beaver, Cycle terminal, maybe even Mouser and DIgikey). Using the OEM terminals should make any future signal installs "plug-and-play" (vs. cut-and-crimp-and-plug-and-play). Square quick-disconnect terminals are a little more widely available. Personally, I try to use weather-sealed connectors whenever possible (Deutsch is great, Metri-packs are OK), but this adds a little connector assembly to a turn signal install.
