   The size is the metric one, from your set, that fits.  6mm is a popular size 
for these bikes.
I looked in the manual and cannot find a torque setting.  For me, this means 
try and approximate the torque required to remove.  German torque would likely 
apply here.  (Gutentight). Remember, you can always tighten more if there are 
leaks, not so if you over tighten and break something.  Since I have a 700S 
also, I am scared as hell about wrong length of bolts.  So..take out and 
replace from/to the exact same hole.  Gasket seal seems to be the preference.
