Chicken and Pasta Sauce

 You'll love how easily this dish comes together, while your family will
simply love eating it! For a cheesy version, put shredded or thin-sliced
mozzarella on top before baking, or just pass some grated Parmesan at the
table.

*Servings:* 4 to 6

*Ingredients:*

   - 1 (3-pound) chicken, skinned and all visible fat removed
   - 1 (28-ounce) jar pasta sauce of your favorite variety
   - 1 small onion, leek or medium shallot, finely chopped
   - 1 (6-ounce) can sliced mushrooms, drained
   - Chopped scallions or parsley, for garnish (optional)
   - Cooked, buttered pasta, for serving (optional)
   - Cooked asparagus spears, for serving (optional)

*Directions:*

In a large ovenproof dish, add the chicken, pour on the sauce, stir in the
onions and mushrooms, cover lightly with foil and bake for 1 hour at 350
degrees F. It's as easy as that!

To garnish, sprinkle on chopped scallions or fresh chopped parsley and serve
with buttered pasta and asparagus spears.

*spicy tip:* To give the dish a kick, sprinkle on some red pepper flakes.
Other additions can be sliced olives, capers, shredded carrots, diced lean
ham, low-fat hot dog slices or sprinkles of herbs such as fennel, basil or
oregano mixed in.
