Leek and Focaccia Soup with smoked salmon and orange sour cream Ingredients Fresh leek 120 gms (well washed and finely sliced), vegetable or chicken stock 600 ml, Focaccia bread 80 gms (cut into squares) or any other dark white bread, smoked salmon 80 gms (cut into small stripes), sour cream 40 gms (or mascarpone cheese --- Italian green cheese), fresh chives 20 gms (finely chopped), skin of 1 whole orange (finely grated), extra virgin olive oil 20 ml, salt and white pepper to taste, a little crushed black pepper for the sour cream.
Preparation Saut the leek in the olive oil, add the stock, bring to a boil and simmer on low heat for 10-15 minutes and put aside. Toast cubes of the Focaccia bread and add to the soup along with salt and pepper to taste. Mix the sour cream (or mascarpone cheese) with cut chives, a little crushed black pepper and finely grated orange peel. Serve 1 scoop of the orange sour cream on top of each soup serving and garnish with the strips of smoked salmon.
