*Spicy Tomato Barbeque Sauce*

*Ingredients*

   - 8 oz (225 g) chopped tomatoes
   - ½ pint (300 ml) of passata
   - 4 fl oz (115 ml) of cider vinegar
   - 2½ oz (70 g) of brown sugar
   - 1 finely chopped onion
   - 2 tbsp of vegetable oil
   - 1 tbsp of Worcestershire sauce
   - 1 finely chopped garlic clove
   - 2 tsp of chilli powder
   - 1 bay leaf
   - several drops of liquid smoke flavouring
   - salt and pepper

*Method*

   1. In a large saucepan, heat the vegetable oil over a medium-high
   heat.
   2. Add the chopped onion and cook until softened.
   3. Then stir in the garlic, chopped tomatoes, passata, vinegar, brown
   sugar, Worcestershire sauce, chilli powder, bay leaf and liquid smoke.
   4. Bring the mixture to the boil, stirring constantly and then reduce
   the heat to a simmer.
   5. Cook the sauce for 15 - 20 minutes, stirring occasionally. Season
   with salt and pepper to your taste.
   6. Add to grilled or barbequed meat at the end of cooking or serve as
   an accompaniment to your meal
