Beurre Blanc

Ingredients
Vinegar100 ml, white wine 100 ml, bay leaf 1, parsley sprig 1, thyme sprig 
1,peppercorns 4, butter 300 gm (cut into small squares), cream 40 ml,onion 20 
gm (sliced), juice of 1 lemon, salt and pepper 2 taste.

Preparation
Bringvinegar, white wine, bay leaf, peppercorn, herb sprigs and onion to aboil. 
Reduce by half and strain. Discard peppercorns, etc., and keepwine reduction. 
Put reduction in pan and bring back to a boil, addcream and reduce slightly. 
Slowly whisk in diced butter, do not boil.Squeeze the juice of 1 lemon and 
check seasoning.
