Yes, I've always used bibtex like this, although I don't know what does it have to do with nix. :) About the iterative latex run, for what I remember, it's an iterative process in order to stabilise the cross references. As the references affect the layout of the document, they have to be updated for the new layout. In fact you have to run pdflatex as much times as the document stop changing, I think.
