Warn while the JSON legacy setting is unset, and describe the default in the
guides

While grails.converters.json.legacy is not set, the initializer logs one
warning, once per JVM, that a later release renders JSON through the
JsonMapper by default, and how to keep or switch the rendering.

- ConvertersConfigurationInitializerSpec checks that the unset setting
warns once, and that true and false do not.
- The REST guide's date and time section describes the default again,
with a paragraph for the setting false.
- The upgrade guide's map key and toString(false) paragraphs apply to
the setting false, and the PATH reference fix, which applies whatever
the setting, is listed with the exceptions to the Grails 8 text.
  Grails8JsonRenderingSpec pins the corrected paths.
- hibernate5/grails-hibernate opts in, with spring.jackson.time-zone,
and JsonMapperConverterSpec renders a domain class instance whose lazy
  association is a Hibernate proxy.
- The guides, the javadoc and the configuration metadata say that a
later release, rather than Grails 10, makes false the default.
