docs: Javadoc, a comment and the XML notice that said more or other than the
code does

- DomainClassRendering: whether a class can have the class name and the version
written is decided when its serializer is built, and each write reads them
again, so a rendering can leave them out but not add one.
- The domain.jackson.enabled setting's Javadoc said the JsonMapper renders
domain classes as the converter does; SETTING_CONVERTERS_XML_DEEP's deprecation
did not name Grails 11.
- JsonMapperValue streams only with the same JsonMapperSupport instance, which
a marshaller takes from the converter's getJsonMapperSupport().
- The format aliases count among Spring's safe extensions whatever parameter
negotiation is set to, and the configuration's aliases include the defaults;
Spring accepts a trailing semicolon and a parameter without a value, so the
lenient path is for what it rejects.
- The legacy XML notice advised a Spring XML converter, which does not take
domain objects or collections; it advises DTOs, as the guide does.
