The To: line shows up fine in notmuch-show for me (in emacs). It only shows up like this when editing. I think this is actually a general mail issue, and is not a notmuch issue. I don't understand all the issues, but I think non-ASCII characters in headers have to be encoded, and that's what you're seeing. jamie.
