and (also on OSX) TeXShop of course! I am wondering why it so rarely gets mentioned on this list - OK this is not a Mac-list. But I hope it's not politically incorrect to mention TeXShop: the PDF-Source switch it provides is one of the greatest deals in TeXing!!
