You can customize the symbol appearing in your items, and set it to nothing…

  \definesymbol[NoSymbol][{}]
  \definesymbol[MySymbol][{$\heartsuit$}]

\starttext

  \startitemize[Nosymbol]
  \item foo
  \item bar
  \item baz
  \stopitemize

  \startitemize[MySymbol,packed]
  \item foo
  \item bar
  \item baz
  \stopitemize

\stoptext
