Hi Toby,
Were you aware if you click on the scrolling bandwidth
graph at the bottom of the screen
it will take you to a window for the interface stats.
If you click on the historical tab then
drag your mouse along the graph it will show
top_talker information and the time of day.

The simple solution to your question is to write a small Lua script that looks at the saved RRDs and computes the top X over the last Y hours/days/weeks. The recent past is in memory instead so sorting hosts per data moved should be enough
