I'm currently rewriting the sFlow plugin and I have removed the probe capability. This is because if you need a probe you now have several vendors that offer probes in their switches (see www.sflow.org) and also because InMon offers a set of open-source probe tools (http://www.inmon.com/technology/sflowVersion5.php).
