Replying to my own post for the sake of others. So far none of the p2v plugins I have came across have support for Win2008x64. ESX doesn't update the scsi drivers, so the inbox lsi_scsi.sys is all you need. Problem is it probably doesn't have a start type of 0 (boot). Boot from bartpe or whatever you use, run regedit, load the hive on the vm, change it in the services key. It already has a critical device db entry.
