The method you are describing is exactly what we did, it went very smooth.

Anyone upgraded from Windows 2003 to 2008 AD yet? Any problem? I am thinking 
about doing fresh install of Windows 2008 and not upgrade my existing DC.  I 
want to bring up a fresh 2008 server and make it a DC with the existing 2003 
domain. Then demote the 2003 DC's, take them off the domain, and reload the 
server with Windows 2008. This was how I went from Windows 2000 to Windows 2003.
