We use SBS08 and DFS to share files across sites. You can have multiple exchange servers with SBS if you want, but with a good VPN link and RDP/HTTP as a backup you should be fine. We didn't anticipate moving large files around until I mixed up some folders and put a load of ISO's in the DFS share. Next morning they were across all the sites like a rash!!
You can have additional servers to host the DFS shares on every site and with proper use of group policies you should be fine.
