  "Disappearing" as in "deleted", or as in "doesn't show up in the folder list"?

  Check your mail server's logs and/or open the mailbox using native
tools to help answer the question.

  If the folder is there but just not showing up, it may be due to
Outlook caching the folder list and/or other users have different
folder subscriptions.

  Outlook doesn't list the folders on the mail server every time it
connects; it retrieves the folder list once and saves a local copy.
That cache can become corrupt and/or out-of-date.  There's an option,
I think it's "Reset Folder List", that will force Outlook to download
the folder list again.

  Outlook (depending on version and configuration) may use the IMAP
subscription list, which is a server-side list of folders the client
says it wants to see.  If one user is subscribing a folder and another
user is un-subscribing the folder, that will cause confusion.   Or
maybe (supposition here) the other user never had it subscribed, and
Outlook then submitted a new subscription list to the same IMAP
account.

  You might try a different (non-Outlook) IMAP client, at least
temporarily, to see if the problem is limited to Outlook or not.
