You can have as many DNS servers as you want. If you move to a different subnet, you'll have to change the IP addresses of everything in your VMs, which (1) is tedious, (2) will have to be done with that subnet isolated, and (3) prolly invalidates your disaster recover test, since the whole point is to see if other stuff can use them.
