Something I do sometimes is just say "Talk to me about <X>. Pick a feature and explain it" where <X> being some skill/concept/technology/etc that either their resume claims their strong in or the position is for and see how that goes.

Unless the employee is junior, we'll then take the candidate through a scenario, asking them how they'd design a solution using whatever their strongest technologies are, to see how they'd approach it and what things they need to consider.
