All IP phones I've ever seen are switches. That doesn't mean there aren't any that are hubs aka bridges, of course...
I was thinking in terms of PC management ;) For the things you're talking about... it's just like any other switch. You will see at a minimum 2 MACs per port - one for the PC, one for the phone. Whether you see more than that and what you do about it depends on your users and your policies.
