I've had to recover a file from a windows VM that was on an ESX volume. OnTrack EZRecover scanned for missing partitions and actually found the partition in the deleted VMDK and let me recover the file. EZR doesn't work on linux file systems so I couldn't restore the actual vmdk file, but that wasn't necessary.
