I use both Hyper-V (clients) and VMWare (%dayjob%), although admittedly I know Hyper-V from the ground up and VMWare I just mainly create machines and move them around. VMWare is more flexible although 2008 R2 Hyper-V is "good enough for actual use" - even though my clients are on pre-R2 Hyper-V.
IMO both are pretty easy to figure out. The downside of Hyper-V is you have an OS you still have to patch and reboot regularly which may or may not matter to you.
