I would suggest avoiding the Sybex "Mastering SCOM 2007". I personally didn't like it. And not to toot my own horn too much, but I think my "Monitoring Exchange Server 2007 with OpsMgr 2007" is very approachable. While the overall focus is on Exchange, I also cover AD, Windows Server, DNS, IIS, and SQL monitoring.
