ok, i really, really like this OT, but this wil probably be last input.

3 years ago I got to be a judge at the Memphis in May BBQ championship.  
I judged shoulder, wings and whole hog.  It was a GREAT time.  Now the 
toddler has crimped the "i drive for BBQ" roadtrips, but he is worth it.
