Make sure you have DVD drives! We did an in place upgrade of all our domain controllers to get the fine grained password policies; recently one of the domain controllers hosed up and the repair from the DVD would have been a very helpful utility, but without a DVD ROM in the server we were left to rebuild the server from scratch and then a restore from backup, a much longer process than it should have been.
If you're planning on using Server 2008 for file services, keep in mind that Microsoft has changed the basic default NTFS security rights over the file sharing services.
