Just chiming back in to say I solved my problems with callbacks! http://docs.thefoundry.co.uk/nuke/90/pythonreference/ (click nuke.callbacks in the left hand side navigation pane)
Turns out that addOnScriptClose works great when you want to execute something on Nuke exit. Thanks Justin, Frank and everyone else for their help! :) Cheers, Fredrik
