DocumentNodeStore can opt individual Caffeine caches into asynchronous maintenance while preserving synchronous maintenance as its default. The bundle-local `FT_OAK-12437` is disabled by default and gates every Document cache: while it is disabled, even explicit ASYNC requests resolve to SYNC. Changing the toggle applies to newly constructed caches; recreate the DocumentNodeStore after changing it so all caches use the selected policy. This follow-up builds directly on #3176, which introduces Caffeine for DocumentNodeStore with SYNC maintenance only and entry-owned persistence metadata. It restores the per-CacheType builder override and validates asynchronous eviction, synchronous defaults, and the FT-off safety path. It implements [OAK-12437](https://issues.apache.org/jira/browse/OAK-12437). Validation with `java17`: 27 targeted `oak-store-document` tests pass, including both maintenance modes, concurrent node/children loads, persistent diff reopen, and FT registration/default/removal lifecycle.
