I would say this is more a parameter to `startBackup` and `startRestore` than a 
global config (one might want to call `startBackup` at different times for 
different destinations - think about hourly/daily/monthly backups). 

In any case, I agree it should have a sensitive default, but I would go for the 
more homogenous `segmentstore-backup` :) 

Correct me if I'm wrong but I think this is an incremental backup. If not, 
maybe the default should include a timestamp.
