I did the same thing and I made the ceiling 8 feet. That gives you room to pull the truck in and to raise the hood. You won't be able to jack it up that much, but enough to get under it with it on jack stands. You will also be able to use a standard garage door.
My other garage I built with a height of 13 feet 2 inches from floor to ceiling and that let me put in a hoist and overhead fluorescent hanging lights. I can raise the hoist to full height with the hood open. This is a 2 post 10,000 pound unit. I can walk under it without any problems and I 6' 2" tall. Hope this helps.
