A minimal configuration should fit in 128 GB of RAM. I believe we have folks doing Beijing installs on that class environment so a minimum should fit. In Amsterdam we ran on 64 GB for some variations of minimal but the components have grown but I dont think we are a factor of two larger.
There is a limit on the number of containers per K8 host that some folks have run into so I would keep it to the minimum for your initial config and then add to it over time. OOM team might have better data but I think you will be fine in 128 GB for a minimized config.
