Yes, some of the sessions can immediately turn into training video. The video editing may not be needed as long as the video and audio quality is decent.
Furthermore, even for the people attending the meeting in person, they may want to attend multiple sessions that are scheduled in parallel. A video recording will solve that problem as well.
