Interesting--I just tried the stock Jetty download without changing any of the default memory settings and didn't have any issues. This was on Ubuntu 9.10 32-bit with 4GB of RAM, running on an older ThinkPad T60p with a Centrino Duo (basically a Core 1 Duo). The only thing I can think is that maybe you have a bunch of other Java apps taxing your JVM?
