If you need to be able to do absolutely _anything_ with your mail, Sendmail 
is the best and only product.  You can even write a new mail server using 
the config file language...

For most of us, Postfix is a lot easier to use.  ;)

I've run Postfix on OpenBSD, Darwin, and FreeBSD.  Never had any problems, 
and I've always been able to do anything I wanted.
