You can run the ./configure_etc.sh as many times as you want, the idea is
that you run it after each modification to the config.xml file.

Yes, this is what you are supposed to do. You have not posted any error
messages, but in my experience if you made a mistake while editing the
config.xml file, then the configure_etc.sh script will not work.
Check the config.xml file is still valid XML !
