I'm following up my own mail here, but there was one thing I left out. 
I think the idea of creating a "demo CD" of all the health care related
applications as suggested by Jeff B would be a good use of someone's
time and effort.  Just to recap Jeff's idea, there are bootable demo CDs
of Linux, that could be modified to include all the apps pre-installed. 
I got a demo of this (just the Linux part) at a freemed event here in
France and it is pretty slick.  One can just put the CD into any modern
PC and in less than three minutes, Linux is running with a GUI desktop. 
The hard drive is not changed when booting this way.
