I have. Even running two Windows guests on a headless box. They are accessible by rdp which is provided by vbox.

To do that I had to monkey with SMF. If you just have one Ubuntu guest, you should be fine with whatever VirtualBox provides. Too bad you won't be able to use the crossbow driver.
