I don't think this issue is anything you are doing wrong. More likely it is
a bug in JavaFX. Have you tried this with 8u60? We made changes in the
rendering of Region nodes in 8u40 specifically for region borders (which I
think is what is used for Pie charts). We made follow-on fixes in 8u60 -- see
https://bugs.openjdk.java.net/browse/JDK-8089063 -- that may or may not have
addressed this.
If this still fails for you with 8u60, please file a bug.
