You need to set "readFormat: new OpenLayers.Format.GML.v3()" in new OpenLayers.Protocol.WFS()

I use tomcat also but with apache and mapserver, so not sure if the problems can be related to geoserver itself, I'd say that geoserver needs some attention when using proxies.
