Are you sure that should be Project rather than Porject?

Your SASL DN from the email you just sent is:

c=us,st=texas,l=irving,o=sci,ou=dev,cn=hadrian rsa

which doesn't seem to match the first part of your regexp, it would be more like

sasl-regexp c=us,st=texas,l=irving,o=sci,ou=dev,cn=(.*) ldap:///ou=SASL,ou=Project Test Entries, dc=my-domain,dc=com??sub?(cn=$1)
