try in the openmeetings/WEB_inf/classes/logback-openmeetings.xml

<level value="DEBUG"/> => <level value="ERROR"/>

if it gets ignored / I think for the RC2 you can also goto Red5's
conf-folder and edit the log4j.properties file there to set it global
to ERROR for all webapps.
