We just strip off everything from a package that's not required at run-time. However "not required" is a flexible term that leaves room for discussion. Currently, we install man pages and, dependent on their structure, example configuration files or commented items inside configuration files.
We discussed this today and agree that some packages might benefit from additional documentation.
