how did you install it?

the button probably refers to the gnome desktop file 
/usr/share/applications/thunderbird.desktop - which in turn has an execution 
path ("TryExec" and "Exec") which still points to thunderbird v2

you need to save a copy of this file & then edit it to include the correct path 
for thunderbird 3, which might be somewhere like /opt/sfw/bin/thunderbird
