I second using rsync. I use Dirvish, which is a nice layer on top of rsync to do daily snapshots and keep two weeks history available.
I was thinking of do this kind of setup as well. However, since there are machines that aren't on all the time, I was considering a "push" setup for these, rather than a "pull" as in Dirvish.
