i.e. use the OpenSSL build process to generate everything, ignore it's generated libraries and simply create what you want from the objects that now exist. That way you have almost complete control and it doesn't require changes to the OpenSSL build scripts.

Is it easy/possible to tell the OpenSSL build process to name the generated DLLs (and corresponding LIBs) differently than ssleay32 and libeay32? I don't see anything obvious other than by manually renaming them after the fact (and not sure how that would affect DLLs/EXEs linking with the LIBs that then need to locate the DLL).
