It should work out of the box. There many ways, depending on what program 
you want to use and from what environment.

For instance, kde print manager has a virtual pdf printer. OpenOffice can 
both export to pdf and print to pdf (internally) if you create the printer 
with "/usr/lib/ooo-2.0/program/spadmin". Or you can install a 
pseudoprinter with cups. There is another solution via email, I have 
heard.

There is also a manual way: any program can usually print to file, which 
in Linux means a postscript file, and these can be converted to pdf using 
ps2pdf script, which is part of the typical installation.

There are other tools if you use latex, allowing indexes and extra things.

There is pdftk to manipulate pdfs afterwards.
