Postfix is not logging to /var/log/mail itself, instead it is sending all log notifications to syslog. In other words: you need to restart syslog. You probably need to set up smtp auth for Postfix to allow relaying from your mobile phone. Most of these devices have pretty miserable options to configure smtp auth. Please post the output of "postconf -n" , /etc/postfix/master.cf (without the comments) and the options that are available in your mobile phone for authentication. -- Sandy List replies only please!
