hmm, vmware in general should work as we do a lot of testing with virtual 
machines. but in our configuration we use bridged networking and an externel 
DHCP server.

which version of ubuntu is installed?
do you see messages like these at the server console:

[EavesdroppingPXEService] Got PXE DISCOVER on 0.0.0.0/0.0.0.0:67 from 
/0.0.0.0:68 MAC=....
[EavesdroppingPXEService] Conversation started
[EavesdroppingPXEService] Got OFFER within Conversation...
[EavesdroppingPXEService] Sending PXE proxy offer DHCP Offer: hwAddress=...

which messages do you see on the on the thinclient screen?
